Baby Back Ribs
By :The Essential Keto Instant Pot Cookbook by Casey Thaler
This delicious entrée provides protein, iron, B12, and much more. The ribs are also a breeze to make, and are definitely one of my favorite Instant Pot recipes. Pair with cauliflower rice or a bowl full of dark leafy greens for a perfect dinner.

Instructions
  1. Pour bone broth into the Instant Pot.
  2. In a large bowl, mix the red pepper, chili powder, mustard, hot sauce, oregano, salt, black pepper, and cumin together thoroughly.
  3. Rub mixture over ribs, then place the ribs in the Instant Pot, on a rack, with the meatier part of the ribs facing outward.
  4. Secure lid, and cook in Meat/Stew mode for 45 minutes (or until desired tenderness), with valve sealed.
  5. Switch the pressure release to Venting, remove ribs, and brush lightly with barbecue sauce.
Recipe Notes

NOTE: You can also place the ribs on a baking sheet, and perform the additional step of finishing them in the oven. They should take about 5 minutes, per side.

First time making ribs in my Instant Pot. The ribs were fall-off-the bone tender and tasty. I would recommend finishing them in the oven with the sauce. I didn’t, but I feel like it would have made them even better.

    Hi Lsabin,

That is a great suggestion. When cooking meats, if you have some extra time when it has finished cooking, putting meat under the ovens broiler adds a nice crisp.

I made this as my first dish, I’m not pleased with how it came out, its way to tender, the cooking time maybe too long, and i ended up with a soup with bones. I had no ribs to pull out. I feel that it was a waist of ribs.

This is a GREAT recipe to build on-thank you! First attempt came out very good but could see taking out earlier and adding a little more time oven to bake in BBQ sauce. Then again maybe that would dry it out, dunno. On a 10 degree night in Minnesota, this gave us a glimpse of summer to come. Enjoy.

I usually made these in a slow cooker for hours but these came out amazing in just 1 hour. I upped the time to an hour bc the pot was full but they came out just right. Highly recommend.

I cut a rack of baby back ribs into 2-rib pottions. Put Spade L pork rub on for a few hours. Placed in instant pot on rack standing on end around pot with meaty side out. Probably could have fit 2 racks of ribs. Cookeed with 1 cup chicken broth on meat/stew setting for 50 minutes then released pressure. Brushed with store bought bbq sauce. Finished in 450-degree oven for 5-10 minutes. Came off bones perfectly when eaten.
