  • 1 teaspoon cumin seeds
  • 4 cups cauliflower florets about one medium cauliflower
  • 2 cups potatoes sliced, about 1 large potato
  • 1/2 cup tomato diced
  • 1 teaspoon salt
  • 1 teaspoon garam masala
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon cumin powder
  • 1/2 teaspoon coriander powder
  • 1/4 teaspoon cayenne pepper
  • 1/4 cup Water

Instructions
  1. Use the Sauté function to heat the Instant Pot. When display reads "Hot", add the oil.
  2. When the oil shimmers, add the cumin seeds. They'll splutter like popcorn.
  3. Once this spluttering occurs, add in the potatoes and sauté. You want the potatoes to brown and crisp a little, and you want good, brown fond (crispy bits) at the bottom to flavor the final dish.
  4. Add the spices and sauté briefly.
  5. Add in the tomatoes and the water and scrape up all the lovely fond at the bottom.
  6. Add in the cauliflower and set your Instant Pot to cook at low pressure for 2 minutes.
  7. When time is up, quick release the pressure and garnish with chopped cilantro if needed. Serve and enjoy!

    I would increase measurement of water to 1/2 cup to collect more flavor from the bottom. Really great flavor.

    Delicious!! I add a cup of sweet corn and a cup of sweet peas for a nice vegan meal. I probably make a fresh batch every week! Love it! ❤️❤️

    This dish has a very good flavor, I substituted mustard seed instead of cumin seed and added a large clove of minced garlic. The next time, I think 3/4 of water would better suit this dish as it’s a bit dry.

    My first recipe in my new instant pot! Turned out very well! I added slight more spice, used yellow potatoes with skins on, small chopped hot pepper, about one peas and an extra 1/4 cup water as i like it a bit saucy. I think particularly the flavour of the potato using the pot was what made it different from a stovetop method.

    Very nice and pretty quick.
    I added curry powder and a bit of honey to give it a bit of a sweet base and focus.

    Amazing. Wonderful flavor. No bite. Only suggestion is that this amount is AT BEST for two people if you have an additional protein. I cooked a white fish using the same spice as a rib and it worked perfectly.

    This was great. I added more water like people said in the comments but that made it a bit soupy. It still tastes good though! Next time I’ll follow the instructions to the letter. Great and easy recipe!

    Tasted great. Bumped up the spices to heaping and added more potatos. Will add more water next time. Needs some sauce. 😉

    Found tje saute a little stressful as wasn’t sure how much to briwn as things were sticking to bottom a lot. I used extra oil too. Yet once I added the water and tomato everything came off bottom easy. Would be helpful to get some idea of how thick to slice potato. Did get a burn message a few minutes in too which was concerning.
