Aloo Gobhi
A healthy, delicious potato and cauliflower curry made with aromatic spices in under 10 mins in an Instant Pot!

  • 1medium onionthinly sliced
  • 2 plum tomatoesdiced
  • 4cups cauliflower florets2 inch pieces
  • 1medium potatopeeled and cut into wedges, I use russet potatoes
  • 1tablespoon cooking oil
  • 1/2teaspoon cumin
  • 1/2teaspoon turmeric
  • 1tablespoon mild Kashmiri red chili powderLess if using a spicier chili powder
  • 1tablespoon cumin-coriander powderspice blend
  • 1-1/2teaspoon garam masalaincrease by half for a medium spicy curry
  • 1teaspoon salt

  1. Turn Instant Pot to Saut√© mode. Once display reads “Hot”, add oil and cumin seeds. Saut√© for 30 seconds.
  2. Add onions and mix well. Cook covered with a glass lid on for 1 minute.
  3. Add tomatoes, mix and cook covered for another minute.
  4. Add turmeric, red chili powder, cumin-coriander powder, garam masala and salt. Mix well.
  5. Add potatoes and cauliflower florets. Add 1/4 cup of water . Mix well.
  6. Put Instant Pot lid on with pressure valve to sealing. Cook on Manual at high pressure for 3 minutes. Cook for only 2 minutes if you like cauliflower to be more firm.
  7. When time is up, quick release the pressure, open the Instant Pot and stir gently. Garnish with cilantro.
  8. Serve hot with naan, paratha or toasted pita bread. Enjoy!
