Ingredients
  • 1 medium onion thinly sliced
  • 2 plum tomatoes diced
  • 4 cups cauliflower florets 2 inch pieces
  • 1 medium potato peeled and cut into wedges, I use russet potatoes
  • 1 tablespoon cooking oil
  • 1/2 teaspoon cumin
  • 1/2 teaspoon turmeric
  • 1 tablespoon mild Kashmiri red chili powder Less if using a spicier chili powder
  • 1 tablespoon cumin-coriander powder spice blend
  • 1-1/2 teaspoon garam masala increase by half for a medium spicy curry
  • 1 teaspoon salt
  • cilantro for garnish

Instructions
  1. Turn Instant Pot to Sauté mode. Once display reads "Hot", add oil and cumin seeds. Sauté for 30 seconds.
  2. Add onions and mix well. Cook covered with a glass lid on for 1 minute.
  3. Add tomatoes, mix and cook covered for another minute.
  4. Add turmeric, red chili powder, cumin-coriander powder, garam masala and salt. Mix well.
  5. Add potatoes and cauliflower florets. Add 1/4 cup of water . Mix well.
  6. Put Instant Pot lid on with pressure valve to sealing. Cook on Manual at high pressure for 3 minutes. Cook for only 2 minutes if you like cauliflower to be more firm.
  7. When time is up, quick release the pressure, open the Instant Pot and stir gently. Garnish with cilantro.
  8. Serve hot with naan, paratha or toasted pita bread. Enjoy!

    Quite delicious! I needed to add an extra minute to the cooker to tenderize the potatoes but other than that, this was great. Oh, I also added garlic in the beginning with the onion.

    Super easy and tasty! 3 minutes was too long for my tastes tho, i like my veggies a bit more firm. They came out really really soft…..like, mashable soft. I’m thinking maybe 1 minute………we shall seeeee! Def making again!

    Really simple and quick recipe. I didn’t have any fresh tomatoes, so I substituted a tin of diced ones. That being the case, I should have left out the 1/4 cup of water, since the tomatoes added a lot of extra liquid.

    I’ll continue to tweak this recipe to my personal taste, but ‘as is’ it’s wonderful.

    This recipe was great! Tasty. Only thing I recommend is cooking for two minutes rather than three as my dish came out way too soft, almost mushy. But overall will make again! Thanks for the recipe!

    At first I thought the cauliflower was too cooked, but it was actually perfect! Even better as leftovers.

    Great flavour. Next time i would double the recipe and try cooking for only 1 min as i found the vegetables too soft after 2 min.

    So good! And so easy!
    I took the comments and cooked for only 2 minutes. Consistency was perfect.
    And I too used a can of diced tomatoes. I added maybe 1/8 a cup water. Yum. I’ll definitely make this again.

    Long, the cauliflowers were too soft i will try for 1 min next time. Recepie was good
