  • 3 1/2 cups frozen corn kernels divided,
  • 3 cups chicken or vegetable stock
  • 1/2 yellow onion diced
  • 1 tbsp sugar
  • 1 tsp dried thyme
  • 1/2 tsp salt
  • 1/4 tsp white pepper
  • 1/4 tsp onion powder
  • 1 tsp corn starch whisked into 2 tablespoons water
  • 1/3 cup red bell pepper diced
  • 1/3 cup heavy cream
  • Crumbled bacon to garnish, if desired

Instructions
  1. Seat glass pitcher on the base of the Instant Pot® Ace and add 2 1/2 cups of the corn, chicken stock, yellow onion, sugar, thyme, salt, white pepper, and onion powder.
  2. Secure and lock lid.
  3. Choose the Soup • program for chunky soup (20:00 minutes). Pause when 5 minutes are remaining.
  4. Stir in cornstarch and water mixture, then add bell pepper and the remaining 1 cup of corn kernels.
  5. Re-secure lid and continue cooking for the remaining 5 minutes.
  6. Once program has completed, stir in heavy cream and serve topped with crumbled bacon, if desired.
Recipe Notes

Helpful Tip: For added freshness, try garnishing this with fresh thyme leaves, chopped parsley, sliced scallions, or chives. It is also great with diced ham in place of the crumbled bacon. Unlike the bacon, you don’t have to worry about it getting soggy, so feel free to add the ham in the last 5 minutes of the cook time.

    This is a soup recipe specifically for our Instant Pot Ace Blender.

    For Instant Pot Multi-Use Pressure Cooker soup recipes, try the filter button, it is the black button with 3 white lines on the top right hand side beside the search bar. Once pressed in meals choose soup and then select apply.

    1 tbsp of sugsr makes the chowder too sweet, also 1 tsp of cornstarchbis not enough to get the chowder to be thick
