Instructions
  1. Add the Pot Mixture ingredients to the Instant Pot, in the order listed.
  2. Secure the lid, making sure the vent is closed.
  3. Using the display panel select the MANUAL function*. Use the +/- keys and program the Instant Pot for 12 minutes.
  4. When the time is up, quick-release the remaining pressure.
  5. Carefully remove the chicken from the pot to a cutting board and shred, then return to the pot and stir.
  6. Serve in a bowl topped with sour cream, diced tomatoes, shredded Mexican-blend cheese and diced avocados.

    Looks like it’ll be watery at first, but after shredding the chicken and putting it back, it’s great. Could use a little more taco seasoning maybe.

    Great taste. I have an 8 quart IP so I used 3 cups of broth instead of 2. Next time I’ll use 3 chicken breasts instead of 2. Chicken was not as tender. Will make this again with less chicken.

    My son and I made this as our first recipe. I used frozen chicken breast as it arrived at dinner time. My son was amazed at how quickly it cooked and said it was amazing. He then wanted some to take to school for lunch. First time hit. My husband said the chicken tasted a little dry, thus the 4stars.

    At 12 mins my rice wasnt even close to cooked and food was stuck to the bottom of the pot. Back on now for 6 mins which means longer because its got to get up to pressure. Hopefully it tastes good or this was a huge waste

    I used my 8qt IP and made this recipe as the first meal. It was super simple and delicious. I doubled the recipe so it took a little longer to preheat but it was perfect. This will be worked into the rotation on a regular basis.

    Delicious! First recipe i used with the pot. Don’t know why people have a hard time making it. So so easy, just as directed. It seems a little watery when you first pull off the lid after cooking, but by the time you shred the chicken, it’s perfect. Will definitely make again!

    Followed recipe exactly, even layering as it says. Took a long time to heat up and then got a burn warning. I quick released pressure and check the contents of the pot. It was partially cooked. Nothing was sticking on the bottom, all seals and vents looked good. I adjusted some added broth per a website i looked up on how to deal with burn warning. It did the same thing again but some burned to the bottom this time. The meal could be easily saved and finished in the oven. So not a total loss

    Skipping the avocado, this is definitely a do-again recipe and has been favorited in the app. Delicious, hearty. I couldn’t finish my bowl. Plenty left for tomorrow since my son is a picky eater and so it’s only my husband and I eating it.

    First recipe made in our new 8 qt pot. After reading some reviews, I upped the taco seasoning to 1 1/2 packets.

    I made this as burritos and it was an instant win with the kids and easy breezy to make. Huge amount of food here. I doubt we ate half as a family of four! Maybe time to invest in a vacuum sealer… eat half, freeze half?

    My pot did briefly flash a “burn” warning, but i ignored it and everything turned out great!

    First recipe in the instant pot and it turned out great! We used homemade salsa which gave it so much flavor. Followed the instructions on layering ingredients as directed and not stirring – had no issues.

    First time using my instant pot and I followed the directions just as it said but I got the burn notice. I feel if I would add more liquid to it I would not have had this issue.

    Tastes really good!!!! But i did get the burn notice that everyone talks about and i had to finish it in the oven. I think maybe for the smaller instant pots that more broth and less rice should be used though i don’t have an exact measurement to offer… This was my second ip recipe and even though my first turned out perfectly, i think this one will be the one on the meal planning rotation!

    First attempt at using the Instant Pot…followed the directions & got the burn message twice. Added 1 extra cup of broth and it still turned out a little mushier than I expected snd the rice wasnt fulky cooked. Family enjoyed it—I was a little underwhelmed but I’ll try it again.

    First try was a success! Wasn’t sure what to expect after reading all the comments about this dish. This was the first time I’ve used the Instant Pot. Went exactly by the recipe and it was perfect. I was using a 6 quart pot. Can’t help thinking you may have to adjust the liquid amount if using a larger pot. My only suggestion would be to put the season pack directly on top of the chicken to give a bit more flavor to it, or add a little extra seasoning.

    Added a little water because the chicken broth can was not the right amount. Ended up having too much liquid in the end. Will be adding more seasoning too, since it was watered down, and no water next time!

    Easiest instant pot meal I’ve made so far, and one of the tastiest. Chicken was juicy, rice was perfectly cooked. I used salsa verde, which added the perfect amount of spice. I also made a fresh pico de gallo to serve on top. Within an hour of coming home, we had eaten and packed up the leftovers for lunch!

    Overall delicious and simple. For my 8qt the proportions worked perfectly, however the rice was a bit crunchy after 12min. Will try a bit longer next time.

    First recipe cooked in instant pot!!
    The recipe is easy to use with some additions. Adding 2 1/2 cups of chicken broth instead of 2 cups was helpful in making chicken soft.
    Cutting chicken breast in 1/3 pieces instead of 1/2
    For extra flavor add 1tsp cumin powder.
    For Serving, reserve 1/4 can of both (black beans and corn) and serve on tortillas alongwith cooked chicken, rice, fresh tomatoes and olives

    Hi Bgronitz,

    This recipe can cause a burn message if you do not layer the ingredients in the order they appear.

    When you have a burn error, release the steam and add in more liquid. You will also have to scrape the bottom of the inner pot, if there is any stuck on bits left stuck it will show burn again.

    Most of the time it will be the same cooking time even though the ingredients are halved. The only time you will need to reduce the time when reducing the serving size is when cooking smaller cuts of meat.

    No matter how much liquid I add, it keeps giving the burn indicator and the bottom is caked with burned rice and salsa!

    This was a hit with the family! After reading the reviews I did add more seasoning. I also used romaine leaves as our shells, and loaded them with goodness! Makes a lot! Great meal prep recipe.

    DO NOT mix the layers of ingredients. I repeat, DO NOT. You will get a burnt layer caked on the bottom and nothing cooked properly. Lesson learned!

    This is my new favorite meal. I have made this twice now. First time I made it, I followed the recipe exactly as stated. I got the burn warning same as everyone else but I let it continue to cook. I made it tonight but this time I added 3 cups of broth instead and hit the poultry button and set it for the time it stated in the recipe. Cooked perfectly! We love it!

    It tastes great and was simple and fast to prepare…… but!!!!.. per other reviews, my chicken and rice were slightly undercooked so i put it in for another 6 minutes.. i also got the burn warning and it was pretty caked on the bottom. Next time I’ll use more broth and cook it longer

    I used this one for my first time using the instant pot and it turned out EXCELLENT. Overall, the cooking time took longer bc the pot had to pressurize. I also cooked my chicken for 19 minutes. Here are my tweeks:
    1. No beans
    2. Add chopped onion
    3. Add chopped jalepenos
    4. Used 3 cups of chicken broth (I ended up with 1.73 lbs of chicken so I used extra for that and bc other reviews recommended 2.5 cups).

    I tried this recipe and it turned out great! I will say though it makes A LOT of food. So if you’re making for two people you’re gonna have a lot left over. What I did was I took the extra and made burritos out of them and threw them in the freezer!
    Next time I think I may add a few jalepenjos and or some cilantro and lime for some bite!

    Loved these!!! So delicious. Made it with brown rice so I did cook it a little longer (20 mins). Chicken was so tender I couldn’t even take it out to shred it. I just used tongs to mix it up. Was able to split it into 7 portions for lunches and they were quite big so probably could have gotten 8 out of it.

    The recipe itself was good… however despite following the recipe to a T, I had major issues with the “burn” alert. I tried adding more chicken broth and scraping the bottom, but it did not help and the pot kept shutting off. I ended up removing everything from the pot to find a thick layer of ingredients burned to the bottom. I finally just gave up and cooked the dish in a traditional oven.

    I made this as directed except my kids didn’t want salsa in it so I used 3 cups of broth, cooked 12 minutes on the poultry setting, and added extra seasoning based on prior comments and it came out great! I also cut chicken into thinner breasts and it was juicy and easy to shred.

    Many people have said they got the burn warning. Here is a variation that works. Double the amount of broth to 2 cups. I used traditional basmatti rice. Add the ingredients to the pot and STIR IN THE RICE. Pressure cook for 10 minutes. Comes out perfect every time and you will not get the burn warning.

    NOTE: Generally NOT a good idea to delay cooking anything that will soak up liquid in the pot during a delay cycle. This is one such recipe. Mix and cook right away.

    2nd time making this. Granted it’s a TON of food for 2 people.
    Never have had any issues with burning, but we will be on alert to make sure this doesn’t happen.
    Quick and easy!
    I like making/mixing our own Taco Seasoning because the packaged Seasonings are just too salty for our liking (Cumin, Paprika, Chili Powder). The salsa we now use, Cocina Fresca Salsa, from our local grocery store and better than using Pace Picante or like it is too “pastey”, if that makes sense.

    This recipe has been my nemesis for two months. Tonight I FINALLY was able to not get a BURN message. For anyone else struggling, here’s what I did different this time.

    1. I cut the chicken longways so it covers the majority of the bottom.

    2. I measured and weighed EVERYTHING. Normally I eyeball ingredients but I used a food scale and measuring cups for every single item.

    3. Instead of dumping everything in, I gently poured each item in the center only and used a hand to flatten it out. I tried to carefully let the rice rest on top of the chicken, flatten, slowly pour corn on, etc.

    4. I didn’t move my IP once set. I usually slide it back so I have more counter space but I let it be this time so nothing could shift.

    I don’t know why this recipe is so difficult but I was finally able to conquer it by slowing down and being very careful and methodical. You can’t finagle this one. And in case it matters, I have the 6qt model.

    I hope this helps anyone in a similar situation.

    Don’t bother.

    I layered it as directed, received a burn notice. Ingredients were stuck to the bottom. I used an 8 qt. Ultra.

    After the burn notice, I released the pressure and added two more cups of broth. Got a burn notice a second time.

    Ended up sautéing the food in the pot. Garbage recipe.

    There wasn’t enough liquid so some of the rice didn’t cook. Make sure to cut up the chicken or it won’t cook all the way either. I added more liquid and am just going to cook it all the way again. Will probably be way overdone, but better than getting salmonella.

    Cooked according to directions, chicken was pink and rice slightly undercooked, added another cup of chicken broth ,cut the chicken smaller and set for another 6 minutes, we shall see how it turns out! Really hoping we aren’t heading out for fast food!

    Great recipe! Very flexible- I used drumsticks instead of chicken breasts, and quinoa instead of rice. Next time I’ll do the quinoa separately. Very easy to make and great flavours.

    Easy peasy…okay use the silicone trivet. You can get it at BB & B. Add ingredients like listed. It is not rocket science. I mis it up a little. Pressurr cook at 20 mins low setting. Totally worth it. I use my trivet for all meats no need to scrub.

    Made this with 6 hungry other people waiting in my house. Got a burn notice THREE times!!! Dinner was delayed until after 8pm. Kids were melting down after what should have been a quick and easy 20min dinner. Wont be making this again. For someone on a budget, I wasted $20+ of ingredients and had to make something else. Rice wasnt cooked, food was burnt and chicken raw. The 3rd reset of time, I used low pressure for 16mins.

    We are sorry to hear that this recipe didn’t work out. Before making any of our recipes, we recommend looking at the difficulty level. The cooking level for this recipe is difficult since it is very precise. All of the ingredients have to be added in the order they are listed. When you add the chicken broth you want to add it quickly with this recipe. Otherwise, some of the liquid will start to evaporate. Before restarting, remember to always de-glaze your Instant Pot Pressure Cooker, using a wooden spoon. If the unit was restarted without being de-glazed, more starch would be released. Unfortunately, this would cause it to burn more.

    This recipe is marked difficult because you have to make sure that everything is added as it appears in the ingredients list. Occasionally some ingredients do not have the same water content which could alter the result of recipes. We recommend adding a couple of extra tbsp of chicken broth. To correct a burn error open the lid and add more liquid and ensure that nothing is stuck at the bottom of the pot.

    Tastes great! I used brown jasmine rice then 12min was not enough. So added another 5min high pressure and it was perfect. Ate with shred Romaine lettuce, tomato, sour cream and jalapano. You can also wrap in a tortilla.

    First time using my instant pot, i made this recipe and it was delicious!! The other problem i had was that at 12 minutes the rice was not cooked all the way. I added about 3 more minutes and ot cooked fully. Delicious , amazing!

    It was a super easy meal! I used 1 1/2 cups of quinoa and 3 cups of chicken stock. My chicken was partially thawed to start. We added some sauteed peppers and onions to the pot mixture and it worked out well.

    This recipe calls for cut chicken but you certainly can.

    When cooking from frozen ensure to use a meat thermometer to check the chicken after it is done cooking to ensure it reached safe temperature. Add more cooking time if it it didnt reach proper temperature.

    Made this several times foe my family.. i always use prepared mexican rice like the boild bags in the store along with the white rice.. i add extra chicken breasts also just so there is enough.. my wife and son devour it once a week.     Made this for dinner. So easy and tasted! My two year old loves it. I put two chicken breasts, adjusted for 14 minutes. Everything was tender.

    I made this, followed the directions exactly and got the burn notice. Took everything out of the pot and tried again. Got the burn notice again. Gave up and cooked it on the stove. What happened ?

    Good recipie but does need some adjustments. Add extra broth atleast 1/2 cup, cut up chicken, and cook on low for 20 mins. My pressure cooker kept saying it was overheating on high, but cooked just fine on low

    Tastes delicious, when the instant pot actually pressurizes. I’ve tried adding liquid and still have problems about half the time.

    This recipe is difficult as the liquid amount can vary depending on the brand of salsa and chicken used. The taco seasoning may also have more thickeners depending on the brand used.

    Make sure to add everything in the order listed and do not stir.

    This was a hit with the fam!
    I took advice of other users and increased the chicken broth to 3 cups. I also added: one whole chopped onion, 3 cloves of chopped garlic, my homemade taco seasoning blend that includes red pepper flakes and smoked paparika, 1/4 c avocado oil and our local grocery stores spicy salsa. I cooked on poultry setting, high pressure for 15 min. Que rico!! Will def cook again.

    Loved this dish. Used brown rice instead of white. Would soak brown rice for a bit in water or chicken broth and add into pot as it was a bit under cooked. Husband wrapped in Tortilla and I ate it with lime flavored Tortilla chips. Good both ways or stand alone.

    If you follow the recipe it will burn the rice to the bottom. I have a feeling this was just thought up and never tried.

    I halved the recipe, left out the corn but kept a whole can of black beans, and replaced the rice with red lentils. The texture was a lot like refried beans, without the heaviness. Yum! Family asked me to make it again soon.

    Yes it came out way too dry. Needs a cup more liquid and a bit more seasoning. It was good enough to make again with thise adjustments.

    I added an extra cup of chicken broth and extra taco season. Ended a little saucy but thicken up perfectly. Followed recipe and turned out excellent. We put it in tortillas and on tortilla chips both worked well

    This was very easy to make and so yummy. Definitely needs additional broth. I used a total of 2 cups and it was fine, but really coukd have used more.

    Before making, i read out it turned outfrom the others. I uped the broth and still ended with the burn notice. Opened it and it was soupy. But afterstirring i had to scrap the bottom to release the rice and/ or meat that was stuck on the bottom. It’s a bit frustating. Well it said burn again. I give up. We will eat it as is!

    This was my first time using chicken in the pot. This recipe works great and tastes even better! For some reason, on my app it shows this recipe as the difficult level. Maybe just a glitch on my end, but it was super easy and delish.

    I used 14.5 oz can of fire roasted tomatoes instead of salsa, rinsed quinoa instead of rice, frozen chicken, and 16 ounces of frozen corn instead of 12 ounces. I pressure cooked for 20 minutes on high with a quick release and it worked great.

    Just made this. Followed the recipe, but no rice or anything to substitute initially. We only had 5 minute instant rice. After 12 min, did a QR and added the rice. Another 3 min, QR and it was good to go!
    I like spice n think it could use a little more kick. Maybe marinate the chicken in salsa? Or add hot sauce to taste with your bowl.

    Very easy and very yummy. My rice kept burning. I couldn’t het through even a couple of minutes without it burning. Next time I’m going to cook the rice separately and added it at the end.
